Red Design Group's reincarnation of Bistro Guillaume at a prime riverside promenade tenancy within the Crown Entertainment complex
in Melbourne is responsive to a brief that desired a harkening back to French bistro traditions.
Stephen Tieppo Senior Designer for Red Design Group approached the task of inserting a French inspired installation that married
with the contemporary shell via an emphasis on layering. The result is a space infused with depth, exaggerated volume, richness
and concentrated zones.
Embellishing many of the ground floor surfaces and providing contrast to the expanse of windows opening onto the alfresco terrace,
is an ingredient mix of metallic wallpaper, warm oak timber paneling referencing that which might have been found in early 20th
century French bistros while moulded timber and mirrors give the bar a new twist and focus. Alluring lacquered green finish in the
entry is reinforced on the bar’s timber mouldings infusing whimsy and a sense of fun in Red Design Group’s playful nod to the traditional
rivalry of the French 'frogs' versus the English 'roste beuf'.
Signature custom pendant lights have been reused from the Bistro's former digs, so too a rug, which underscored the mezzanine's
monochromatic hues where decorative wallpaper, banquet seating and joinery create a memorable private dining room. With food by
acclaimed chef Guillaume Brahimi the unabashed hero, partial views have been created into the kitchen at work.
Evoking a strong sense of place and destination albeit a different day and night experience, the design solution invites patrons
to sit, linger and return.

The venue, food experience and interior design work together to ensure that all elements are pitched at the diner,
commensurate with the quality that one would expect to find at Crown, but with an atmosphere that’s casual,
welcoming and fresh.
